It doesn’t get any simpler than a shortbread cookie, but it doesn’t get much better either. They’re little morsels of rich, flaky deliciousity – a simple and satisfying treat.
But, hang onto your wallet because ooh boy can they be expensive! Take a stroll down the cookie aisle at your local market and you’ll see boxes of shortbread cookies no bigger than your average greeting card for $4.00 or more.
And yet, here’s the irony…they’re just butter, sugar, and flour! I understand that the cookie companies need to make a profit, but you and I need to make a profit too.
Without further ado…the following food fight matches Lorna Doone vs. Homemade Shortbread Cookies. May the best cookie win!
Clearly this was not a fair fight. Poor Lorna Doone and the rest of her supermarket friends never stood a chance. Because the homemade cookies are twice as large, we’ll compare ounces instead of number of cookies. For $2.00 we can have only 4 ounces of store-bought cookies (16 small cookies), but we can make 20 ounces (40 large cookies) of the homemade variety. That’s a 5 to 1 advantage!
If you want to take the savings to another level, you could use margarine instead of butter and make an additional 40 cookies for the same price!
Give this recipe a try next time you’re in the mood for some shortbread. It’s delicious, inexpensive, and takes less than 30 minutes to make.
Super Easy Shortbread Cookies
Price Per Serving: Only $0.10
Serving Size: 2 Cookies (1 oz.) – This recipe makes 15 servings
Deliciousness Factor: Very High
1 cup Butter or Margarine
1/2 cup Sugar
2 cups Flour
1/8 tsp Salt
1. Preheat the oven to 350˚.
2. Cream the butter and sugar together.
3. Add the flour and mix well, adding a tiny bit of water to the dough if it’s too dry.
4. Roll the dough out to about ¼ inch thickness and cut into whatever shape your little heart desires. I usually use stars about 2 ½ – 3 inches wide.
5. Bake for about 8 or 9 minutes, until slightly golden.
Lemon Glaze Option: (It will only add about $0.01 per cookie – still much cheaper than store-bought)
1 cup + 1 Tbsp Powdered Sugar
1 Tbsp Lemon Juice
Dash of Salt
2 ½ – 3 tsp of Hot Water
Mix it all together and spread over each cookie to form a thin lemon glaze. Allow the glaze to harden fully before eating. It’s a subtle glaze, so if you want some extra punch, simply add a little extra lemon juice.
